80% of the worlds syrup comes from Canada!
Quebec alone makes about 2/3 of the worlds syrup supply! What would we ever do without you guys? Pancakes would certainly be incomplete without you, Canada.
Yes there is! Established in 1975, the organizations goal is “to promote and protect pure maple syrup and other maple syrup products.” But the real question here is: do their meetings include free pancakes? check 'em out here: http://www.internationalmaplesyrupinstitute.com/
Maple Syrup is a craft all its own
There's actually quite a lot that goes into the bottle that you buy from the supermarket. It takes about 40 liters of sap to make one liter of syrup, and most trees only produce about 50 liters of sap during the season when they're tapped. The sap can also only be tapped during the late winter/ early spring, so there's a very finite amount of time when trees can be tapped for their sap.
