Flourless Avocado Brownies
The Flourless Avocado Brownies recipe comes from The Roasted Root. The recipe makes 16 servings, taking 10 minutes to prep and 45 minutes to cook, for a total cook time of 55 minutes.
These rich, fudgy brownies are packed with healthy fats from avocado and are naturally sweetened with coconut sugar. They’re the perfect way to indulge in chocolate without the guilt!
Ingredients
-
1 large ripe avocado peeled and pitted
-
2 large eggs
-
1/3 cup creamy almond butter well stirred
-
2/3 cup cacao powder or cocoa powder
-
1 cup coconut sugar
-
1 tsp baking powder
-
1/2 tsp sea salt
-
1 1/2 tsp pure vanilla extract
-
1 cup chocolate chips
Directions
-
Preheat the oven to 325 degrees F. Line an 8” x 8” or 9” x 9” cake pan with parchment paper.
-
Add all ingredients except for the chocolate chips to a food processor. Process until completely smooth. You may need to stop the food processor and scrape the sides a couple times using a rubber spatula. Stir the chocolate chips into the batter until well combined.
-
Transfer the brownie batter to the lined baking pan and smooth into an even layer. Bake on the center rack of the preheated oven 40 to 45 minutes, until brownies have set up.
-
Remove brownies from the oven and allow them to cool at least 20 minutes before slicing and serving.
5-Minute Protein Peanut Butter Energy Bites
The 5-Minute Protein Peanut Butter Energy Bites recipe comes from the Ambitious Cookbook. It makes a total of 10 servings. It has a total cook time of 5 minutes.
These easy no-bake energy bites taste like peanut butter cookie dough but are packed with protein, fiber, and healthy fats to keep you satisfied.
Ingredients
-
1/2 cup natural drippy peanut butter (or sub almond butter)
-
1/4 cup honey (or date syrup or coconut syrup)
-
1 teaspoon vanilla extract
-
1/3 cup protein powder of choice*
-
1/3 cup flaxseed meal
-
1/2 cup rolled oats (gluten free, if desired)
-
1/2 teaspoon cinnamon
-
1 tablespoon chia seeds
-
1 tablespoon mini chocolate chips (vegan, if desired)
-
Optional: 1/4 cup unsweetened shredded coconut
Directions
-
In the bowl of a food processor, add in the peanut butter, honey, vanilla, protein powder, flaxseed meal, oats, cinnamon and chia seeds. Pulse together until well combined. Add in chocolate chips (and coconut if using) and pulse a few more times. Use a medium cookie scoop or your hands to grab dough and roll into 10 balls, place in an airtight container.
-
To make without food processor: add wet ingredients to a medium bowl, mix to combine. Add in dry ingredients and mix together until combined. I usually have to use my hands to mix and work with the dough. At this point you should be able to form balls that stick together. Because all peanut butter/nut butter consistencies are different and depending on what protein powder you use, you may need to add in more nut butter or sweetener to help the balls stick together.
-
Store in the fridge for up to 1 week, or the freezer for up to 2 months. Enjoy!
Clean Eating Frozen Banana Ice Cream
The Clean Eating Frozen Banana Ice Cream recipe comes from Dani Spies of Clean & Delicious. It makes 2 servings with a total time of 5 minutes.
This simple banana ice cream is creamy, naturally sweet, and completely dairy-free—perfect for when you’re craving ice cream but want to keep things light.
Ingredients
-
2 frozen bananas, cut into thirds
-
1-2 tablespoons unsweetened almond milk (or any milk you prefer)
-
1-2 teaspoons maple syrup, honey or monk fruit
Directions
-
Pop bananas into a blender or food processor and blend until the bananas have a smooth and creamy consistency (just like ice cream). Depending on how powerful your blender or processor is, your bananas may clunk around a bit at the beginning BUT just give them a minute. Once they start to break down, they turn into this lovely, creamy treat.

adding frozen bananas to a food processor
-
If you want, you can skip the milk addition altogether, but I like to add a little in. I usually use just a tablespoon or two along with the maple syrup. Blend until thick and creamy. Enjoy!
