Nothing says Summertime like a crunchy green salad packed with veggies and meat straight off the grill. This BBQ Pulled Pork Salad has all the deliciousness of a BBQ dinner without any of the dairy, gluten or grains!
Here’s what you need:
-½ C. Pulled Pork, fully cooked
-1 Russet Potato
-2 C. Green Leaf Lettuce, chopped
-1 ½ Tbsp. Gluten-Free BBQ Sauce
-1 Tbsp. Dairy-Free Ranch Dressing
Here’s What to Do:
- Preheat oven to 375°.
- Wash potato and slice into thin strips. Spray a cookie sheet with olive oil, spread out potato strips and bake 35 minutes, flipping halfway.
- Add chopped green leaf lettuce to a salad bowl and add baked potato strips. Add warm pulled pork.
- Drizzle generously with BBQ and Ranch. The creamier the better!
The amazing thing about this salad is its versatility: use extra grilled veggies to load up your plate, try mixing the BBQ sauce in with the pork before plating, add sliced avocado, fresh radishes, and more! It’s also great for the family: gluten eaters can use buns for their pulled pork, kids can dip their potatoes in ketchup, and you can put all the good stuff into a fresh and crunchy salad!
